Denise Skonberg
Denise Skonberg is an associate professor of food science in the newly formed School of Food and Agriculture. Her research objective is to improve the economic and environmental sustainability of seafood processing through the development of value-added products. Denise’s work focuses on utilizing seafood processing by-products and developing technologies to enhance seafood quality. She is enthusiastic about the opportunities to collaborate with Maine’s growing aquaculture and food industries, and feels this is a great time to be involved in food research. Denise teaches graduate and undergraduate courses in food science, including the capstone course “Food Product Development”, and serves as the Graduate Coordinator Food Science & Human Nutrition. She encourages students with strong science aptitude and interest in food to pursue a career in food science.
